Creamy Noodles with Leeks and Peas

12 ounces egg noodles

1 cup peas -- fresh or frozen

1 1/2 cups vegetable broth

2 pounds small leeks -- sliced

1 1/2 cups cottage cheese, 2% fat

2 tablespoons butter

2 tablespoons chopped fresh dill -- or preferred herb

2 tablespoons chopped fresh chives

salt and black pepper

 

Cook the noodles according to package directions. Add the peas during the last 2

minutes of cooking.

 

Meanwhile, wash or rinse the sliced leeks to remove sand and dirt. Drain well.

 

In a medium skillet over medium heat, bring the broth to a simmer; add the

leeks. Reduce the heat to low, cover and simmer for 5 to 7 minutes or until the

leeks are very soft. Remove with a slotted spoon and place in a large serving

bowl. Reserve the broth.

 

Drain the noodles and peas and add to the bowl with the leeks. Add cottage

cheese, butter, herb, and chives. Stir until well blended. Add a few tablespoons

of the reserved broth if need to thin the sauce. Season with salt and pepper to

taste.
