Guest guest Posted March 23, 2001 Report Share Posted March 23, 2001 * Exported from MasterCook * Spicy Broccoli with Garlic Recipe By :The Complete Italian Vegetarian Cookbook - Jack Bishop Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium bunch broccoli (about 1 1/4 lbs) salt 2 tablespoons extra-virgin olive oil 3 medium garlic cloves -- minced 1/2 teaspoon red pepper flakes, or to taste As long as you peel them, broccoli stalks are tender and delicious. Cut off and discard the tough bottom portion, separate the broccoli into long spears and peel the outer skin from each piece. This is an attractive way to serve broccoli. Bring several quarts water to a boil in a large saucepan. Trim all but the last 3 inches from the broccoli stalks. Break the broccoli into fairly large spears and peel away the tough outer layer from the stalks. Add the broccoli and salt to taste to the boiling water. Cook until the broccoli is crisp-tender, 4 to 5 minutes. Drain well. (The broccoli may be set aside for up to 1 hour.) Heat the oil in a large skillet over medium heat. Add the garlic and hot red pepper flakes and cook until the garlic is golden, about 2 minutes. Add the broccoli and stir to coat well with the flavored oil, cooking for 1 to 2 minutes.
