Guest guest Posted March 23, 2001 Report Share Posted March 23, 2001 * Exported from MasterCook * Garlic Pea Purée Recipe By : 1,000 Vegetarian Recipes by Carol Gelles, page 58 Serving Size : 8 Preparation Time :0:00 Categories : Appetizers And Snacks Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup water 1/3 cup split green peas -- rinsed 6 cloves garlic 1 cup green peas (fresh cooked; or frozen thawed) 1 tablespoon olive oil 1 tablespoon fresh lemon juice 1/4 teaspoon salt -- or to taste 1/3 cup finely chopped seeded tomatoes Makes 1 3/4 cups; serves: 8 to 12 Serve these with Crostini (see separate recipe) or other crispy crackers; melba toast is also a good accompaniment. 1. In a 1-quart saucepan, bring the water to a boil. Add the split peas and garlic. Return to a boil. Reduce heat and simmer, covered, 1 1/2 hours. 2. Place the pea mixture, green peas, oil, lemon juice, and salt in a food processor container fitted with a steel blade. Cover and process until smooth. Add tomatoes and pulse once or twice to combine.
