Garbanzo Beans With Escarole

1 tablespoon olive oil

2 cloves garlic -- minced

4 cups lightly packed chopped escarole

1 1/2 cups garbanzo beans

(cooked from dry or canned drained)

1/2 cup vegetable broth

(see separate recipes)

 

Vegan. Low fat

 

Makes: 2 cups; serves. 4

 

Garbanzo beans are just another name for chickpeas.

 

1. In a 1 1/2-quart saucepan, heat the oil over medium-high heat. Add the

garlic; cook 10 seconds. Add the escarole; cook, stirring, until softened,

about 2 minutes. Add the beans and broth. Simmer, uncovered, 10 minutes.

 

Variation: Use small white beans or cannellini instead of the garbanzo beans.
