Fresh Pineapple Salsa

2 cups fresh pineapple chunks

1/3 cup coarsely chopped onions

1/3 cup chopped fresh cilantro

1 tablespoon chopped seeded jalapeño pepper

1/2 teaspoon salt, or to taste

 

Vegan. Low fat

 

Makes: 1 2/3 cups; serves: 8 to 12

 

Be sure to use ripe pineapple (slightly overripe is okay too) in this

incredibly wonderful salsa.

 

1. Place all the ingredients in a food processor container fitted with a

steel blade. Cover and process until finely chopped.

 

Variation: Use less or more jalapeño to taste. If fresh jalapeños are not

available, use 1/4 teaspoon ground red pepper, or to taste.
