Creole Okra With Corn

Amount Measure Ingredient -- Preparation Method

1 tablespoon vegetable oil

1/2 cup chopped onions

1/2 cup chopped green bell peppers

1/2 cup chopped celery

1 1/2 cups whole okra -- top stems sliced

off

11 ounces canned corn kernels -- undrained

8 ounces canned tomato sauce

1/4 teaspoon salt

1/8 teaspoon ground red pepper -- or more to taste

 

Vegan. Low fat

 

Makes: 3 1/2 cups; serves: 4 to 6

 

1. In a 1 1/2 cup saucepan, heat the oil over medium-high heat. Add the

onions, green peppers, and celery; cook, stirring, until tender- crisp,

about 3 minutes. Add the okra; cook, stirring, until okra turns brighter

green, about 2 minutes.

 

2. Add the corn, tomato sauce, salt, and red pepper. Bring to a boil;

reduce heat and simmer, covered, 10 to 15 minutes or until the okra is tender.

 

Variation: Add 1 teaspoon chili powder before adding the tomato sauce.
