Low fat Makes: 3 1/2 cups; serves: 4 to 6 1. In a 1 1/2 cup saucepan, heat the oil over medium-high heat. Add the onions, green peppers, and celery; cook, stirring, until tender- crisp, about 3 minutes. Add the okra; cook, stirring, until okra turns brighter green, about 2 minutes. 2. Add the corn, tomato sauce, salt, and red pepper. Bring to a boil; reduce heat and simmer, covered, 10 to 15 minutes or until the okra is tender.
