Cranberry Salsa

Amount Measure Ingredient -- Preparation Method

1 cup coarsely chopped tomatoes

1/2 cup cranberries

1/2 cup coarsely chopped apple

1/3 cup coarsely chopped onions

1/4 cup coarsely chopped orange -- (with rind)

2 tablespoons chopped seeded jalapeño peppers

2 cloves garlic -- minced

1/2 teaspoon salt -- or to taste

 

Vegan. Low fat

 

Makes: 1 2/3 cups; serves. 8 to 12

 

Fruity, spicy, and tart, this salsa is almost like fresh cranberry relish

with a bang. Use it to jazz up bean or rice dishes.

 

1. Place all the ingredients in a food processor container fitted with a

steel blade. Cover and process until finely chopped.

 

Variation: Use fewer or more jalapeño peppers to taste. If fresh jalapeños

are not available, use 1/4 teaspoon ground red pepper, or to taste.
