Black Bean-Walnut Burgers

1 2/3 cups sprouted black beans with 3/4-inch tails

1/2 cup walnut pieces

1/3 cup chopped onion

2 tablespoons soy sauce

2 tablespoons extra-virgin olive oil

1/8 teaspoon salt, or to taste

1/4 teaspoon crushed red pepper

1 medium carrot, peeled and finely shredded

1 small beet, peeled and finely shredded

1/2 cup rolled oats

Cooking spray

 

In saucepan, combine beans and enough water to cover. Bring to a boil. Reduce

heat, cover, and simmer until tender, about 35 minutes. Drain beans and rinse

with cool water.

 

In a food processor, combine beans, walnuts, onion, soy sauce, oil, salt, and

red pepper. Pulse until thick and nearly smooth.

 

Transfer mixture to a mixing bowl. Stir in carrots, beets, and oats. Form

mixture into 6 patties.

 

Lightly spray a large skillet and brown patties about 5 minutes on each side.

(Or, for a firmer patty, bake in a preheated 350 degree oven for 15 minutes per

side.) Serve on whole grain bread or buns with your favorite burger condiments.
