Hazelnut Gems

Amount Measure Ingredient -- Preparation Method

2 1/2 cups wheat sprouts (tail should be no more than

1/3 the size of the wheat berry itself)

1/4 cup maple syrup

2 teaspoons vanilla

1/2 cup hazelnuts, chopped

2 tablespoons unsweetened coconut

 

Preheat oven to 325 degrees and lightly oil a cookie sheet.

 

In a food processor, place wheat sprouts, maple syrup, and vanilla. Process

well to form a smooth paste, scraping down sides, as needed.

 

Transfer mixture to a medium mixing bowl. Stir in hazelnuts and coconut.

 

Fill a small bowl with cool water. Use your hands or a small scoop to mold

dough into 1-inch balls, dipping your hands in water as needed to prevent

sticking. Place balls on a prepared cookie sheet and flatten into 1/3-inch

thick disks. Bake for 15 to 20 minutes, until a soft crust forms on tops.

Store refrigerated in a tightly sealed container.
