Sunflower and Buckwheat Rolls

4 medium whole-wheat tortillas or chapatis(Indian

flat-bread)

1 cup sunflower or other sprouts

1 cup buckwheat or other sprouts

4 thin slices red onion

1 large tomato, diced

1 small avocado, sliced

1 tablespoon extra-virgin olive oil

1 teaspoon balsamic vinegar

1/4 teaspoon salt, or to taste

 

Place tortillas or chapatis on plates and cover each with 1/4 of the sunflower

sprouts and 1/4 of the buckwheat sprouts. Top each with equal amounts of onion,

tomato, and avocado slices.

 

In a small bowl, whisk together oil, vinegar, and salt. Drizzle evenly over

sprouts. Roll up each sandwich and serve immediately.
