Red Lentil Stew with Wakame

Amount Measure Ingredient -- Preparation Method

1 medium yellow onion, diced

3 cloves garlic, minced

2 medium carrots, diced

1 small crookneck squash -- diced

1 small green pepper, cored and diced

1 tablespoon olive oil

2 cups vegetable stock

2 cups water

1 cup red lentils

1 tablespoon light miso

3/4 cup wakame seaweed -- soaked and drained

Mirin or sherry (see note)

 

In a large pot over medium heat, saute onions, garlic, carrots, squash, and

green pepper in oil until onions are tender, 4 to 5 minutes. Add stock, water,

and lentils, and bring to a boil. Lower heat, cover, and simmer until lentils

are soft, about 25 minutes.

 

Stir in miso and wakame, and heat for 5 minutes, being careful not to boil.

Place in individual serving bowls. Top each serving with 1 teaspoon mirin or

sherry, if desired.
