Wild Rice With Hijiki and Ginger Plum Dressing

Amount Measure Ingredient -- Preparation Method

1/3 cup wild rice

1/3 cup brown rice

2 cups water

1/3 cup dried hijiki(see note)

1/2 cup sliced shitake mushrooms, stems removed

2 bunches scallions, sliced with green tops

1/4 cup chopped walnuts

Cooking Spray

Dressing:

2 tablespoons light sesame oil

1 tablespoon dark sesame oil

1/4 cup rice vinegar

1 teaspoon umeboshi plum paste

2 teaspoons finely grated ginger root

1/4 teaspoon white pepper

 

In a saucepan with a tight-fitting lid, combine rices and 2 cups water. Bring

to a boil over high heat. Stir rice to level, reduce heat to medium-low, cover,

and simmer 45 minutes, until tender. Remove from heat and let stand, covered,

for 10 minutes. Uncover, fluff with a fork, and let cool.

 

In a small bowl, cover hijiki with cool water. Allow to soak for 10 to 15

minutes, until softened. Drain, press out excess water, chop coarsely, and set

aside.

 

Lightly spray a nonstick skillet and sauté mushrooms until soft, about 5

minutes. Set aside.

 

In a large mixing bowl, combine cooked rice, hijiki, mushrooms, scallions, and

walnuts.

 

To make dressing: Combine all ingredients in a small bowl and whisk together

until well blended. Pour dressing over rice mixture and toss to coat. Serve at

room temperature or chilled.
