Chocolate-Orange Mousse

Amount Measure Ingredient -- Preparation Method

8 ounces bittersweet chocolate

2 12-ounce packages extra-firm, lite, or regular silken tofu

drained

1/3 cup orange marmalade

zest of 1 orange

2 tablespoons freshly squeezed orange juice

2 tablespoons orange-flavored liqueur, such as Triple

Sec, curacao, or Mandarine

1 teaspoon vanilla

 

Chop chocolate into small pieces. In a microwave on medium power, or using a

double boiler, melt chocolate.

 

In a food processor or blender, puree tofu until creamy, about 30 seconds,

scraping down sides as needed. Add marmalade, zest, juice, liqueur, and

vanilla. Puree until smooth. Add melted chocolate and puree until well

blended, scraping down sides, as needed. Transfer to individual serving dishes

and chill to desired temperature.
