Kelly's Pancakes

1 cup whole-wheat pastry flour

1/4 cup soy flour

1/3 cup mixed, ground almonds and walnuts

1/4 cup wheat germ

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon sugar

1/2 teaspoon salt

1 large egg -- beaten

1 1/4 cups lowfat milk or soy milk (or more for

thinner pancakes)

1 tablespoon vegetable oil (up to 2 tablespoons)

 

In a mixing bowl, combine flours, ground nuts, wheat germ, baking soda and

powder, sugar, and salt. Stir to mix. Stir in egg, milk, and oil. Mix well.

 

Heat a nonstick griddle or heavy skillet over medium-high heat. Spray or oil

lightly, if desired. Pour about 1/3 cup batter onto griddle for each pancake.

Cook until edges are dry, and bottoms are browned, about 2 minutes. Turn

carefully, cooking opposite sides until golden, about 1 minute.
