Solario Serving Size : 6 Preparation Time :0:00 Categories : Ethnic-Hispanic Potatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 pounds potato -- peeled,quartered lengthwise 15 ounces stewed tomatoes -- diced, canned including juice 1/2 cup salsa -- hot, or picante sauce 1/2 cup minced onion 1 clove garlic -- minced 1 teaspoon cumin 1/2 teaspoon ground coriander 2 teaspoons chili powder 1/2 cup diced Monterey jack cheese -- (about 2 ounces) salt to taste 2 teaspoons cilantro -- chopped In a large saucepan, cover potatoes with salted water and bring to a boil. Reduce heat to low and simmer about 15 minutes, until tender, but firm. Drain and set aside until cool enough to handle. Cut into 2-inch chunks. In the same saucepan, combine tomatoes and juice with salsa. Bring to a simmer over low heat. Add onion and garlic, and simmer for 2 more minutes, stirring occasionally. Stir in potatoes, cumin, coriander, and chili powder. Gradually add cheese, stirring with each addition until melted. Add salt, sprinkle with cilantro, and serve hot.
