Continental Fried Rice

Amount Measure Ingredient -- Preparation Method

1 1/2 tablespoons vegetable oil

1/2 cup chopped onions

1/2 cup chopped green bell peppers

1/2 cup chopped mushrooms

1/4 teaspoon dried thyme

2 cups cooked white or brown rice

1/2 cup cooked peas -- (fresh or frozen)

2 tablespoons white wine or broth or water

 

Vegan. Low fat

 

Makes: 3 1/4 cups; serves: 4 to 6

 

1. In a medium skillet, heat the oil over medium-high heat. Add the

onions and bell peppers; cook, stirring, until softened, about 3

minutes. Add the mushrooms and thyme; cook, stirring, until softened,

about 2 minutes.

 

2. Add the rice, peas, and wine; cook stirring, until heated through.

 

Variation: Stir in 1/2 cup roasted chopped almonds.
