Low fat Makes: 3 1/4 cups; serves: 4 to 6 1. In a medium skillet, heat the oil over medium-high heat. Add the onions and bell peppers; cook, stirring, until softened, about 3 minutes. Add the mushrooms and thyme; cook, stirring, until softened, about 2 minutes. 2. Add the rice, peas, and wine; cook stirring, until heated through.
