Chili-Fried Okra

1 egg

1 tablespoon water

3 tablespoons cornmeal

2 tablespoons all-purpose flour

1 tablespoon chili powder

1/2 teaspoon salt -- or to taste

1/4 teaspoon pepper

2 cups sliced okra -- about 1/2 pound

(1/2 inch-thick pieces)

Oil for deep frying

Makes: 3 cups; serves: 8

 

These are not really as spicy as the title may suggest. For more heat,

stir in some ground red pepper when you add the chili powder.

 

1. In a medium bowl, beat the egg and water until combined.

 

2. In a medium bowl or on a piece of waxed paper, stir together the

cornmeal, flour, chili powder, salt, and pepper until combined.

 

3. Add the okra slices to the egg mixture. Stir until coated. Lift out

with a slotted spoon and roll in corn meal mixture until coated (do this in

small batches).

 

4. Pour the oil 2 inches deep and heat the oil to 375F, or until it

bubbles when a few specks of cornmeal are dropped in. Add the okra, in

small batches, and fry until lightly browned, about 2 minutes. Remove from

pot with slotted spoon and drain on paper towels. Continue with remaining

okra, until all is cooked.

 

Variation: Fried Okra: Use 1 tablespoon extra flour instead of the chili

powder, and reduce the pepper to 1/8 teaspoon.
