Chili Rice With Tomatillos

2 teaspoons vegetable oil

3/4 cup chopped onions

1/4 cup finely chopped green bell peppers

1 teaspoon chili powder

1 1/2 cups chopped tomatillos

1 3/4 cups water

1 1/2 teaspoons fresh lemon juice

1 cup long-grain white rice

1/2 teaspoon salt -- or to taste

1/8 teaspoon pepper

 

Vegan. Low fat

 

Makes: 3 1/3 cups; serves: 4 to 6

 

Two cups of water yield a very moist rice; 1 3/4 cups water is on the dry

side. Adjust to your own tastes. I like chili rice very much, but you

lose some of the character of the tomatillos to the chili flavor

 

1. In a 1 1/2-quart saucepan, heat the oil over medium-high heat. Add the

onions and bell peppers; cook, stirring, until softened, about 3

minutes. Stir in chili powder until absorbed. Add the tomatillos; cook,

stirring, until softened, about 3 minutes.

 

2. Add the water and lemon juice; bring to a boil. Stir in the rice and

return to a boil. Reduce heat and simmer, covered, 25 minutes or until

liquid is absorbed. Remove from heat; stir in the salt and pepper with a

fork; let stand, covered, 5 minutes.

 

Variation: For a spicy rice, stir in ground red pepper to taste when you

add the chili.
