Guest guest Posted March 21, 2001 Report Share Posted March 21, 2001 * Exported from MasterCook * Chili Peanuts Recipe By : 1,000 Vegetarian Recipes by Carol Gelles, page 87 Serving Size : 4 Preparation Time :0:00 Categories : Appetizers And Snacks Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup confectioners' sugar 2 tablespoons sugar 1 tablespoon chili powder 1/4 teaspoon ground red pepper 1/8 teaspoon ground cumin 1 egg white 1 cup salted or unsalted roasted peanuts The spiciness kind of creeps up on you and then these pack a pretty good punch. You can use more or less ground red pepper to suit your taste. 1. Preheat oven to 350F. Grease a 9 x 13-inch baking pan. 2. Place the confectioners' sugar, sugar, chili powder, red pepper, and cumin into a plastic bag. Shake until completely combined. 3. Beat the eggwhite until foamy. Add the nuts and toss until coated. Pour nuts into a strainer to drain off excess egg white. 4. Add the nuts to the bag with the chili mixture about 1 heaping tablespoon at a time. Shake to coat, then gradually add more nuts until all are in the bag. Spread nuts on the prepared pan. 5. Bake 20 minutes, stirring every 5 minutes. Let cool.
