Cannellini Beans and Spicy Broccoli Rabe

1 medium bunch broccoli rabe (about 1 1/4 lbs)

1/4 cup extra-virgin olive oil

4 medium garlic cloves -- minced

1/2 teaspoon red pepper flakes, plus more to taste

4 cups drained Basic Cannellini Beans

Bring several quarts water to a boil in a large saucepan. Discard the tough,

thick stems from the broccoli rabe. Tear large leaves in half and break large

florets into pieces. Rinse the broccoli rabe under cold running water.

 

Add the broccoli rabe and salt to taste to the boiling water and cook until

tender, about 3 minutes. Drain and set aside.

 

Heat the oil in a large saute pan. Add the garlic and saute over medium heat

until golden, 1 to 2 miutes. Add the hot red pepper flakes and cook for 20

seconds.

 

Add the broccoli rabe and stir well to coat with the oil. Add the beans and

cook, stirring several times, just until everything is heated through. Add salt

to taste and more hot pepper if desired. Serve immediately.

 

Serving Suggestions - This dish makes a good main course. Serve with bread to

soak up the pan juices. The dish should be followed by something light and a

little sweet.
