Gobble It Up Blueberry Pasta Salad

Amount Measure Ingredient -- Preparation Method

1 lb package fusilli pasta

1 cup sugar snap peas -- cut in bite size pc

1 cup carrots -- cut in thin half-moo

1 small can water chestnuts -- drained & diced

1 lb veggie turkey -- diced

1/2 cup celery -- chopped

2 kiwi fruits -- peeled & diced

1 3 oz pkg dried blueberries

2 tbsp fresh lime juice (to 3 tbsp)

Dressing:

1 cup nayonnaise

1/2 cup tofu sour cream

2 tbsp fresh mint -- finely chopped OR

2 tsp dried mint

1 tsp garlic powder

1/4 cup sweet onions -- thinly sliced & dice

salt and freshly ground pepper -- to taste

 

Boil pasta according to directions. During last 2 minutes of cooking time,

add sugar snap peas and carrots to blanch. When done, rinse pasta and

vegetables under cool running water to stop cooking. Drain well in colander.

In a 4 cup measure, mix dressing. In a large bowl, toss cooled pasta with

remaining ingredients and dressing. Refrigerate at least 1 hour to let

flavors marry. Just before serving, toss with 2-3 tbsp fresh lime juice.
