Thanks for the Lasagna Al Forno Bolognese receipe posted 16 Mar 2001 ...it

looks wonderful! Does anyone have Bryanna Clark Grogan's receipe for

Nondairy Bechamel?? I would really like to try to make the Lasagna.

15 to 18 uncooked lasagne noodles

1 recipe Ragu alla Bollognese

1 1/2 recipes (3 cups) Nondairy Bechamel

1/2 to 1 cup soy Parmesan

 

This is the traditional northern Italian lasagne, and my husband invariably

requests it for his birthday dinner. The dish consists of pasta, soy

Parmesan, and two other recipes, Ragu alla Bolognese and Nondairy Bechamel.

The two recipes can be made several days ahead of time or earlier in the

day. You can also cook the noodles ahead of time and refrigerate them

between layers of waxed paper. Other convenient time-savers would be to use

a ragu that you have made earlier and frozen and to make the bechamel sauce

in the microwave.

 

Cook the lasagne noodles in salted boiling water until al dente. Drain and

riinse under cold water, then lay them flat between layers of waxed paper.

 

Preheat the oven to 350F.

 

Oil a shallow 9 x 13-inch baking pan. Spread a thin layer of the ragu on

the bottom of the pan. Cover with a layer of noodles, with the edges

touching. Spread a layer of ragu over the noodles, then a layer of bechamel

sauce, spreading it evenly with the back of a spoon. Sprinkle with some of

the soy Parmesan. Repeat the layers util everything is used up, ending with

a layer of bechamel and soy Parmesan. Bake for 30 minutes.

 

Let the lasagne rest for 10 to 15 minutes before cutting it into squares.
