Low fat Makes: 2 cups; serves: 4 Cooked according to this recipe, the beans get very soft and the dish looks like a mush, but tastes de-lish. For a better-looking (but equally tasty) dish, use the variation. 1. In a 2-quart saucepan, heat the oil over medium-high heat. Add the celery, onions, bell peppers, and garlic; cook, stirring, until softened, about 3 minutes. Add the beans and broth; simmer, uncovered, 5 minutes. Stir in the cilantro and red pepper. Variation: Sautéed Black Beans and Celery: Omit the broth and simmering step.
