Artichoke And Parmesan Dip

Amount Measure Ingredient -- Preparation Method

1/3 cup oil-marinated artichoke hearts

1/4 cup mayonnaise

2 tablespoons sliced scallions

(white and green parts)

1 clove garlic -- minced

1/4 cup unflavored yogurt

1/4 cup grated Parmesan cheese

1/4 teaspoon pepper

 

Lacto-Ovo

 

Makes: 3/4 cup; serves: 4 to 6

 

For a really pretty presentation serve this dip in a hollowed-out cooked

artichoke. Guests can then dip the outer leaves as well as other assorted

crudités.

 

1. Place the artichoke hearts, mayonnaise, scallions, and garlic in a

blender container. Cover and blend until smooth.

 

2. Transfer to a medium bowl and stir in the yogurt, Parmesan cheese, and

pepper.
