Black Bean Hummus

Amount Measure Ingredient -- Preparation Method

1 1/2 cups cooked black beans

(cooked from dry; or canned drained]

1/3 cup tahini -- (sesame paste)

1/4 cup fresh lime juice

3 tablespoons extra virgin olive oil

2 cloves garlic -- minced

1/4 cup thinly sliced scallions

(white and green parts)

1/4 teaspoon ground cumin

 

Vegan

 

Makes 1 3/4 cups; serves: 6 to 8

 

1. Place the beans, tahini, lime juice, olive oil, and garlic in a food

processor container fitted with a steel blade. Cover and process until pureed.

 

2. Add the scallions and cumin; cover and process until just combined.

 

Variation: Add 1/4 cup chopped fresh cilantro and Tabasco to taste.
