Beet-Horseradish Sauce

8 1/4 ounces canned sliced beets -- drained

1/4 cup grated white horseradish

2 tablespoons chopped onions

1 tablespoon distilled white vinegar

2 teaspoons sugar

 

Vegan. Low fat

 

Makes: about 1 cup

 

I use bottled horseradish for this recipe. If you choose freshly grated

horseradish, use significantly less (to taste).

 

1. Place all the ingredients in a food processor container fitted with a

steel blade. Cover and process until finely chopped or smooth, whichever

you prefer.

 

Variation: Use only one tablespoon horseradish for a mild sauce. Use 1/3

cup or more horseradish for a hotter version.
