Black Bean Spread

Amount Measure Ingredient -- Preparation Method

1 1/2 cups cooked black beans

(cooked from dry; or canned drained)

1/3 cup sliced leeks

(white and light green parts only)

1/3 cup salsa

4 sprigs fresh cilantro

1/2 teaspoon ground cumin

 

Makes 1 1/3 cups; serves: 6 to 10

 

There are many excellent prepared salsas available in the supermarket that

will be fine for this spread, or you can opt to use homemade salsa (see

separate recipes).

 

1. Place all the ingredients in a food processor container fitted with a

steel blade. Cover and process until smooth.

 

Variation: Add fresh chopped or canned jalapeño peppers to taste.
