Apple Brown Betty

6 slices raisin bread -- cubed

1/4 cup butter or margarine -- melted (1/2 stick)

4 cups cored peeled and thinly sliced apples -- (about 4)

1/2 cup firmly packed light brown sugar

OR dark brown sugar

1/3 cup water

1 tablespoon fresh lemon juice

1/2 teaspoon cinnamon

1/4 teaspoon salt

 

Vegan

 

Makes: 4 cups; serves: 4

 

You can add extra raisins if you like more than those just in the raisin bread.

 

1. Preheat the oven to 400F. Heavily grease a 2-quart baking dish.

 

2. In a medium bowl, toss together the bread cubes and butter or margarine.

 

3. In a large bowl, combine the apples, brown sugar, water, lemon juice,

cinnamon, and salt.

 

4. Place 1/2 of the bread cubes in the bottom of the baking dish. Top

with the apples (reserving the liquid from the bottom of the apple

mixture), then top with remaining bread cubes. Pour the apple liquid over

the bread cubes.

 

5. Bake, covered, 30 minutes. Uncover and bake 15 minutes longer.

 

Variations: Use white or whole wheat bread instead of raisin bread.
