I'll post them separately. Here's the Quick Tomato Sauce: * Exported from MasterCook * Quick Tomato Sauce Recipe By :The Complete Italian Vegetarian Cookbook, Jack Bishop Serving Size : 0 Preparation Time :0:00 Categories : Complete Italian Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons extra virgin olive oil 2 medium cloves garlic -- minced 1 28 oz can crushed tomatoes 2 tablespoons minced fresh basil or parsley leaves salt & freshly ground pepper Heat the oil in a medium saucepan. Add the garlic and saut over medium heat until golden, about 2 minutes. Add the tomatoes, basil or parsley, and salt & pepper to taste. Bring to a simmer, lower the heat, and simmer until the sauce thickens, about 10 minutes. Adjust the seasonings. Use immediately or store in an airtight container (the sauce can be refrigerated for 2 days or frozen for several months).
