I used the Ronzoni pre-made manicotti shells, boiled them for a bit longer than the box said and made the recipe. Really good. * Exported from MasterCook * Spinach Manicotti Recipe By : RisaG Serving Size : 4 Preparation Time :0:00<br> Categories : Cheese Greens Pasta Low Fat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 32 oz jar spaghetti sauce 1 10 oz pkg frozen chopped spinach -- squeezed dry 6 oz fat-free cottage cheese 1/4 cup Parmesan cheese -- grated 1 tsp italian seasoning mix 1/2 tsp kosher salt 1/4 tsp ground pepper 8 uncooked manicotti shells 1 cup fat-free mozzarella cheese -- shredded Preheat oven to 350°F. Spread about 1/4 cup of the spaghetti sauce over the bottom of a 13x9 " baking dish. Set aside. Place a large pot of water up to a boil. When boiling, add salt and cook manicotti shells according to package directions (mine cooked for about 10 minutes). Drain well. Cool off with a bit of water. While the shells are boiling, mix together the spinach, cottage cheese, seasonings and Parmesan cheese. Combine well. Once the manicotti shells are cool enough to touch, fill them with the spinach mixture. Place them on top of the spaghetti sauce in the prepared pan. Pour the remaining spaghetti sauce over the manicotti. Place, uncovered, in 350°F oven for 25-30 minutes. Sprinkle with mozzarella cheese. Place back in oven and cook until cheese is melted.
