Guest guest Posted March 16, 2001 Report Share Posted March 16, 2001 We celebrated my husband 2nd rebirthday yesterday (Triple bypass surgery and start of the Ornish/McDougall lifestyle) and this was the cake I was going to make it is his favorite that is until I saw Lisa's carrot cake article and decided to make that. I can agree it is wonderful even with out the oil .. I thought I would share this one with the lists. I take it to church and NO one there ever turns down a slice they had no idea it was made with wholesome foods. Love fooling those skeptics that think we must live like monks ( don't they realize how good the monks have it they developed most of the really good wines and brandy ect.) :-) Enjoy. * Exported from MasterCook * Rum-Glazed Banana Cake Recipe By :Nancy Adkins Serving Size : 16 Preparation Time :0:00 Categories : Cake Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3/4 cups packed brown sugar 2/3 cup applesauce, unsweetened 3/4 cup egg substitute 1 cup mashed ripe banana 1/2 cup vanilla low-fat yogurt 1 tablespoon vanilla extract 1 teaspoon ground cinnamon 2 1/2 cups whole wheat pastry flour 2 teaspoons baking powder 1 teaspoon baking soda Cooking spray 3/4 cup sifted powdered sugar 1/2 cup dark rum Beat brown sugar and 2/3 cup margarine at medium speed of a mixer until light and fluffy. Add egg substitute, beating until well-blended. Combine banana, yogurt, vanilla, and cinnamon in a bowl; set aside. Combine flour, baking powder, and baking soda. With mixer running at low speed, add flour mixture to sugar mixture alternately with banana mixture, beginning and ending with flour mixture. Pour batter into a Bundt pan coated with cooking spray. Bake at 375º for 1 hour or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes; remove from pan. Let cool completely on a wire rack. Combine powdered sugar, rum, stir until smooth.
