Guest guest Posted March 16, 2001 Report Share Posted March 16, 2001 * Exported from MasterCook * Millenium Mudpie Cake Recipe By :Soyfoods Cooking for a Positive Menopause - Bryanna Clark Grogan Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Dry Mix: 1 1/4 cups pastry flour 1/3 cup unsweetened Dutch cocoa 2 tablespoons soy protein isolate powder 1 teaspoon baking soda 1/4 teaspoon salt Liquid Mix: 1 cup unbleached sugar 1 cup soy milk plus 3 tablespoons soy milk 3 tablespoons oil 1 tablespoon vinegar 1 1/2 teaspoons vanilla This is a new version of a wartime eggless cake that becme very popular in the 1950s and '60s--also called a Wacky Cake or Crazy Cake because it was mixed right in the pan. My kids loved making it and eating it. I've changed the original version, which used water, to make it soy-rich and cut the oil in half. Also, because it's a thin batter and coarse unbleached sugar often sinks to the bottom, I mix the sugar with the liquid ingredients in this version to avoid that. It's easy, chocolaty, and tender, so we often use it as a layer cake (double or triple the recipe to make layers), a sheet cake (double the recipe and bake in 2 9-inch round pans or a 9 x 13-inch pan), or for cupcakes (one recipe makes about 9). Try it with Chocolate-Soy Ganache, or any other favorite icing. Nonchocolate variations can be used for upside-down cakes, fruit-topped cakes, and so forth. Preheat oven to 350F. Whisk the dry ingredients together in a medium bowl. Combine the liquid mix ingredients in a blender until smooth, then pour into the dry ingredients and mix briefly--do not beat. Pour the batter into a lightly oiled 8-inch square or 9-inch round cake pan. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean. Thoroughly cool on a rack before eating. Serve right from the pan, or gently loosen and invert on a plate. Frost as desired, or serve with nondairy whipped topping and fruit. White Wacky Cake: This can be used for a cittage pudding with a fruit sauce, stewed fruit, or any sweet sauce; for upside-down cake; for a layer cake; or a cake sliced horizontally in half withh jam spread between the layers. It's also good with a chocolate icong or ganache. Omit the cocoa and use a total of 1 1/2 cups pastry flour. Use only 1/2 to 3/4 cup light unbleached sugar, and use lemon juice instead of vinegar. Use only 1 teaspoon vanilla. You also can add 1/2 teaspoon of lemon, almond, coconut, or orange extract. Queen Elizabeth Cake: This is a favorite Canadian recipe. Add 1 cup chopped pitted dates to the White Wacky Cake version, and top with Broiled Coconnut Frosting. To make the frosting, mix together 1/3 cup dark unbleached sugar, 2 tablespoons soymilk, 3/4 cup unsweetened coconut flakes, and 1/2 cup chopped nuts, if desired. Spread over the cooled cake. Place the cake 3 to 4 inches below thhe oven broiler, and broil until bubbly and lightly browned. Watch carefully or it will burn! Spice Cake: Use dark unbleached sugar in the White Wacky Cake version. Add 1/2 teaspoon cinnamon, 1/2 teaspoon ground allspice, and 1/4 teaspoon freshly grated nutmeg. Lemon Cake: Omit the vanilla from the White Wacky Cake version. Use 4 tablespoons fresh lemon juice, and omit the 3 tablespoons of soymilk. Add the grated zest of one lemon, preferably organic. If you like, add 2 to 4 tablespoons poppy seeds. Orange Cake: Add the grated zest of one orange, and 3/4 cup dried currants or 2 to 4 tablespoons poppyy seeds to the White Wacky Cake version. Omit the 3 tablespoons soymilk and lemon juice, and use 1/4 cup orange juice. Top the warm cake with 1/2 cup orange marmalade melted with 1 teaspoon orange juice.
