Fennel, Orange and Walnut Sauce

Amount Measure Ingredient -- Preparation Method

1/2 cup crumbled lite silken tofu

1/3 cup walnuts -- lightly toasted

3 tablespoons brown rice vinegar

2 tablespoons extra virgin olive oil

1 tablespoon mirin wine vinegar

1 tablespoon frozen orange juice concentrate

2 teaspoons fennel seed -- or 1 tsp ground

1/4 teaspoon salt

 

Combine all the ingredients in a blender, and process until smooth and creamy.

 

TIP: Toast nuts in a small, dry skillet over medium heat. Stir or shake the

contents of the pan constantly until nuts are golden brown and fragrant, 3 to 4

minutes. Allow to cool to the touch before processing.
