Umeboshi Herb Dressing

Amount Measure Ingredient -- Preparation Method

1/4 cup wine vinegar

3 tablespoons extra virgin olive oil

1 tablespoon umeboshi plum paste

2 teaspoons chopped shallots or onion

1/4 teaspoon dried thyme

1/4 teaspoon dried oregano

dash pepper

 

Combine all the ingredients in a blender, and process until smooth and creamy.

 

Umeboshi paste substitutes: try hoisin, or Chinese plum sauce and add salt. Or

mix 1/2 cup pitless prunes, 1/4 cup cider vinegar and 1 tsp salt.
