Lemon Cream

Amount Measure Ingredient -- Preparation Method

1 12.3 oz package extra-firm silken tofu -- crumbled

1/3 cup grade A light maple syrup

3 tablespoons fresh lemon juice

1 tablespoon grated lemon zest (preferably organic)

 

Combine all the ingredients in a blender, and process until very smooth. Chill

in a covered container.

 

Lemon-Ginger Cream: Fold in 1/4 cup finely minced crystallized ginger.

 

Description:

" This delicious cream can be used as a pudding or a topping for fruit

or cake. "
