Lemon Tofu Pie

1 9-inch pastry crust -- prebaked for 5 minutes and cooled

Filling:

1 pound medium-firm tofu

3/4 cup unbleached sugar

1/2 cup fresh lemon juice

2 tablespoons cornstarch or wheat starch

grated zest of 1 large lemon (preferably

organic), or 2 teaspoons lemon extract

 

Preheat the oven to 350F.

 

Combine all the filling ingredients in a blender or food processor until very

smooth. Pour into the crust and bake for 35 minutes. Cool the pie on a rack,

then refrigerate until serving time.
