Ginger Vinaigrette

Amount Measure Ingredient -- Preparation Method

1/4 cup apple juice

3 tablespoons rice vinegar

3 tablespoons extra virgin olive oil

1 1/2 tablespoons mirin wine

1 1/2 tablespoons soy sauce

2 teaspoons grated ginger root

1/4 cup finely chopped fresh mint

OR flat leaf parsley

 

Combine all ingredients in a bowl. Whisk to mix well.
