Guest guest Posted March 14, 2001 Report Share Posted March 14, 2001 tried this a few wks ago, really good- * Exported from MasterCook * Chocolate-Peanut Butter Tofu Pie Recipe By :Soyfoods Cooking for a Positive Menopause - Bryanna Clark Grogan Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 9-inch pastry crust -- baked and cooled Filling: 1 12.3 oz package extra-firm silken tofu 2 1/2 tablespoons water 1/2 cup unbleached sugar plus 1 1/2 tablespoons unbleached sugar 1/2 cup unsweetened Dutch cocoa plus 1 1/2 tablespoons unsweetened Dutch cocoa 1 1/4 teaspoons vanilla 1/8 teaspoon salt scant 1/2 cup smooth or crunchy natural peanut butter 2 tablespoons chopped roasted peanuts This is not a low-fat dessert, but it is considerably lower in fat than similar pies that use melted chocolate. It's a great dessert for those times when you want something really rich. If you are allergic to peanuts, use roasted almond or cashew butter, or any other nut butter that you prefer. Place all of the filling ingredients in a food processor or blender, and process until very smooth. Pour into the cooled crust, and smooth the top. Garnish the top with the roasted peanuts.
