Guest guest Posted March 14, 2001 Report Share Posted March 14, 2001 * Exported from MasterCook * Fruit Fillings for Cobblers Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Fruit of choice--see dirrections* corn starch--see dirrections** sugar*** flavorings**** Fruit*: any ( or a combination of ) the following fruits: Apples ( tart type ), Apricots, peaches, nectarines, pears or plums or sour cherries: 1 3/4 pounds Blackberries, Blueberries, Frozen cherries, Raspberries or strawberries: 2 pints fresh or 24 oz frozen Mangos: 3 pounds Frozen Strawberry and Rhubarb combination: 10 ounces each Prepare the fruit in the following way: Apples: Peel, quarter, core and cut into thick slices Apricots: Halve and pit Blackberries: Rinse Blueberries: Rinse and pick over Mangoes: Peel, pit, and cut into thick slices Peaches or Nectarines: Peel, pit, and cut into thick slices Pears: Peel, quarter, core and cut into thick slices Plums: Pit and quarter Raspberries: Rinse Sour Cherries: Stem and pit Strawberrries: Stem and rinse, if large cut into halves or quarters Strawberry and Rhurbarb: prepare strawberries as above and cut rhubarb into 1/2 " chunks Corn starch**: Blackberries, frozen strawberries & rhubarb, raspberries: 1 tablespoon Apples: 2 teaspoons dissolved in a cup of water Apricots, Mangoes, Blueberries, Peaches, Nectarines, Pears or Plums: 2 teaspoons Sour cherries: 1 1/2 tablespoons Sugar***: Apples, Blackberries, Peaches, Nectarines , Pears or Strawberries: 1/3 to 1/2 cup Apricots, Blueberries, Plums or Raspberries : 1/2 to 2/3 cup Sour Cherries: 2/3 to 3/4 cup Rhubarb & strawberries or Mangoes: 1/2 cup Flavorings****: Apples: 1/2 teaspoon cinammon, 1 teaspoon vanilla, 1 tablespoon brandy Apricots: 1 teaspoon vanilla, 1/2 teaspoon vanilla extract Blackberries: 1 teaspoon vanilla Blueberries: 1/2 teaspoon cinammon, 1 teaspoon vanilla Mangoes: 1/4 teaspoon ground ginger Peaches or Nectarines: Pinch of cloves, 1 teaspoon vanilla, 1 tablespoon brandy Pears: 1/4 teaspoon ground ginger or grated nutmeg, 1 teaspoon vanilla Plums: 1/2 teaspoon cinammon, 1 teaspoon vanilla Raspberries: 1 teaspoon vanilla Sour Cherries: 2 teaspoons almond extract, 1 tablespoon kirsch Strawberrries: 1 teaspoon vanilla Strawberry and Rhurbarb: 1 teaspoon vanilla Combine the ingredients for a specific filling in a bowl and use as directed in the cobbler recipe.
