Fresh Fruit Fillings for Crisps and Betties

Amount Measure Ingredient -- Preparation Method

2 1/2 pounds fruit of choice--see dirrections for

options -- ( up to 3 pounds )

1/4 cup sugar

1 1/2 tablespoons lemon juice

1/2 teaspoon grated lemon zest

 

These are options--choose one or a combination of more than one for your

Crisp or Betty

 

Apples...use Granny Smith, Maciintosh or another kind of tart apple:

2/12 to 3 pounds of apples, peeled, quartered and cut into 1 " chunks

 

Peaches or Nectarines, 2 1/2-3 pounds: Peel, pit and cut into 1/2 " wedges

 

Pears, 2 1/2 -3 pounds: Peel, halve, core and cut into 1 " chunks

 

Plums 2 1/2 -3 pounds: Peel and cut into 1/2 wedges ( & add 1 tablespoon

quick cooking tapioca to the plums )

 

 

 

Combine fruit, lemon juice, sugar and zest ( and tapioca if using plums ) in

a bowl and use as directed in the Crisp or Betty recipe
