It has a rich flavor and texture that belies its very low fat content. Coconut extract, an optional ingredient, doesn't make it taste like coconut but instead gives the cream a richer flavor. Using a nondairy milk other than soy will reduce the amount of soy flavor, as well. Combine all the ingredients in a blender, and process until very smooth. (Be patient.) This can be refrigerated for several days. Stir gently before using.
