Sweet Thick Soy Pouring Cream

1/2 cup plain rice milk or almond milk

1/2 cup extra-firm silken tofu

4 teaspoons grade A light maple syrup

pinch salt

1 tablespoon vegetable oil (optional)

1/4 teaspoon coconut extract (optional)

 

This is a very smooth cream for beverages and desserts. It has a rich flavor

and texture that belies its very low fat content. Coconut extract, an optional

ingredient, doesn't make it taste like coconut but instead gives the cream a

richer flavor. Using a nondairy milk other than soy will reduce the amount of

soy flavor, as well.

 

Combine all the ingredients in a blender, and process until very smooth. (Be

patient.) This can be refrigerated for several days. Stir gently before using.
