• Make a soup early in the day or the day before to allow plenty of time

for flavors to mature and for the soup to get good and cold.

 

• Since cold dulls flavor, the seasonings need to be stronger than the same

soup served warm. Always taste a cold soup just before serving to see if

it needs a little lemon, salt, or a fresh herb garnish to bring up the flavor.

 

• To make smooth-textured soups interesting to eat, include some garnish of

substance, such as finely diced vegetables and fruits or a salsa.

 

• Sweet fruit soups are best served as a dessert or over ice as a

beverage. Their sweetness can dull the appetite for what's to follow. On

the other hand, a sweet soup may be just the thing for a hot day.
