Always taste a cold soup just before serving to see if it needs a little lemon, salt, or a fresh herb garnish to bring up the flavor. • To make smooth-textured soups interesting to eat, include some garnish of substance, such as finely diced vegetables and fruits or a salsa. • Sweet fruit soups are best served as a dessert or over ice as a beverage.
