Guest guest Posted March 14, 2001 Report Share Posted March 14, 2001 * Exported from MasterCook * Chocolate Pudding Recipe By :Soyfoods Cooking for a Positive Menopause - Bryanna Clark Grogan Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups soy milk 1/3 cup unbleached sugar 1/4 cup unsweetened Dutch cocoa 3 tablespoons cornstarch 1 to 2 tablespoons soy protein isolate powder (optional) 1/4 teaspoon coconut extract (optional) 1/2 tablespoon instant coffee or coffee substitute (optional) pinch salt 1 teaspoon vanilla 1 tablespoon Kahlua or other liqueur (optional) Mix all the ingredients except the vanilla and liqueur, if using, in a blender or with a hand blender until smooth. Pour into a medium, heavy-bottomed saucepan. Stir the mixture constantly over high heat with a wooden spoon until it thickens and comes to a boil. Reduce the heat to low, cover, and cook 1 minute. Stir in the vanilla and optional liqueur. Microwave method: Cover a large microwave-safe bowl and microwave on high for 5 minutes. Whisk in the vanilla and liqueur, if using. Pour into 4 pudding dishes or custard cups, cover, and refrigerate for several hours. If you don't want a skin on top, place plastic wrap right on the surface of the pudding.
