The original recipe was from the LA Times in 1990 from a restaurant in Hollywood, CA. I changed the type of nuts in them and used low fat cheeses. Also put them on homemade rolls. These were very good. I had this recipe for over a year and never made them. I'm glad I finally did. I served them with fries and a salad. * Exported from MasterCook * Cheesey Veggie Burger Recipe By : RisaG Serving Size : 10 Preparation Time :0:00 Categories : Cheese Grains Mushrooms Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups button mushrooms or mixture -- chopped 1 lg onion -- chopped vegetable oil -- to saute 1 cup old-fashioned oats 1 1/2 cups low-fat mozzarella cheese -- shredded 1/2 cup dry cottage cheese 1 cup low-fat cheddar cheese -- shredded 2 eggs -- OR 1/2 cup egg substitute 1/2 cup bulghur wheat -- cooked 1/2 cup soy nuts 1 cup brown rice -- cooked 2 tbsp fresh parsley -- chopped 1 tbsp cilantro -- chopped salt and pepper -- to taste Preheat a nonstick skillet over medium heat. Add oil and saute mushrooms and onion until tender. Drain, cool. In a large bowl, combine cooled mushroom mixture, oats, mozzarella, cottage cheese, cheddar cheese, bulghur wheat, eggs, soy nuts, and herbs. Season with salt and pepper. Mix well. Chill for a few hours. When ready to cook, divide mixture into 10 large patties. Cook over medium coals (charcoal), pan fry, or broil until golden brown on both sides. Serve patties on whole wheat buns or other desired rolls. Top with sliced onion or sliced tomato, lettuce, whatever you like. - - - - - - - - - - - - - - - - - - NOTES : Risa's notes: If you cook these too long, the cheese starts to ooze out. Does anyone see a reason why any of these wonderful burger recipes could not be put in a loaf pan and baked instead?
