Barley Salad

 

Recipe By :Peter Berley, The Modern Vegetarian Kitchen (2000)

Amount Measure Ingredient -- Preparation Method

2/3 cup pearl barley

1 1/2 teaspoons salt -- divided

1 yellow summer squash -- seeded and diced

1 zucchini -- seeded and diced

1/3 cup diced red onion

1 cucumber, peeled -- seeded and diced

1 red bell pepper, peeled -- seeded and diced

2 tablespoons thinly sliced scallions -- white and green part

2 tablespoons minced fresh dill or parsley

3 tablespoons extra virgin olive oil

2 tablespoons umeboshi vinegar

2 tablespoons fresh lemon juice

1/2 teaspoon black pepper

1 bunch watercress for garnish

 

In 3-quart saucepan over high heat, bring 6 cups water to a boil. Add the barley

and 1/2 tsp salt and simmer for 30 minutes, or until tender. Drain the barley in

a sieve and rinse under cold running water until cool. Place the sieve over a

bowl to drain.

 

In a pan fitted with a steamer, combine the squash, zucchini and red onion.

Steam, covered, for 3 to 4 minutes. Shock the vegetables in a large bowl of cold

water to arrest the cooking. Drain thoroughly.

 

In a large bowl, combine the steamed vegetables, barley cucumber bell pepper,

scallions and dill.

 

In a Separate bowl, whisk together the oil, vinegar, lemon juice, remaining tsp

of salt and black pepper to taste. Pour over the salad and mix well.

 

Mound the salad on a platter and garnish liberally with watercress leaves and

tender stems.
