Kathleen * Exported from MasterCook * Apple And Oat Crisp Recipe By : Vegetarian Celebrations, by Nava Atlas, page 51 Serving Size : 6 Preparation Time :0:00 Categories : Desserts Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium apples -- peeled, up to 5 cored and quartered and thinly sliced 1/4 cup finely chopped pecans or walnuts 1/2 teaspoon cinnamon 1/2 teaspoon ground ginger 1 dash nutmeg 3 tablespoons apple juice concentrate ***TOPPING*** 1 tablespoon reduced-fat margarine 3/4 cup oatmeal 1/4 cup light brown sugar 1/2 teaspoon cinnamon frozen vanilla nonfat yogurt OR nondairy frozen desert 6 servings The use of oats in Irish desserts is widespread. This is not much different from the apple crisps familiar to most Americans. Preheat the oven to 350 degrees. Combine the apples, nuts, spices, and juice concentrate in a mixing bowl and toss until the spices coat the apples evenly. Transfer to a 9- by 9-inch baking pan. Melt the margarine in a skillet. Stir in the oats until evenly coated with the margarine. Remove from the heat and stir in the sugar and cinnamon. Sprinkle the topping evenly over the apples. Bake for 45 minutes, or until the topping is golden brown and the apples are tender. Serve warm over frozen yogurt or nondairy dessert.
