I used Wehani rice as the grain. * Exported from MasterCook * Pineapple Sweet and Sour Recipe By :Soyfoods Cooking for a Positive Menopause - Bryanna Clark Grogan Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large onion -- cut into eighths 1 clove garlic -- minced 1 19 oz can unsweetened pineapple chunks with their juice 1 green bell pepper -- seeded and cut into 1-inch squares 1 red bell pepper -- seede and cut into 1-inch squares 1/4 cup cider vinegar or rice vinegaar 1/3 cup light unbleached sugar or grade A light maple syrup 1/4 cup ketchup 1 tablespoon soy sauce 2 tablespoons cornstarch or wheat starch dissoved in 2 tablespoons cold water Choose 1 of the following: 2 1/2 cups dry textured soy protein chunks OR 12 to 16 ounces Oven-Fried Tofu -- cut in half or thirds 1 teaspoon grated fresh ginger (supposed to be 3rd item) If you are using the textured soy chunks, reconstitute in 2 1/2 cups boiling water, either soaking or simmering until tender. Drain well and pat dry. Roll in flour or cornstarch, and bake in single layers on dark cookie sheets at 500F for about 7 minutes. (Dark cookie sheets brown foods better.) Then turn over and bake the other side for 5 to 7 minutes, or until golden all over. In a large, lightly oiled wok or heavy skillet, steam-fry the onion, garlic, and ginger over high heat, stirring constantly and adding drops of water if necessary to keep the vegetables from sticking. When the onion begins to become slightly translucent, add the pineapple, peppers, sugar, vinegar, ketchup, and soy sauce, and bring the mixture to a boil. Add the soy protein chunks or oven-fried tofu and dissolved cornstarch, and cook over high heat until the sauce thickens and the soy chunks or tofu are heated through, about 2 minutes.
