Guest guest Posted March 12, 2001 Report Share Posted March 12, 2001 * Exported from MasterCook * Couscous Salad with Smoked Tofu and Oranges Recipe By :Sue Kreitzman, Low-fat vegetarian Cookbook Serving Size : 4 Preparation Time :0:00 Categories : Pasta Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- COUSCOUS: Juice and finely grated peel of 1/2 lime -- and 1/2 orange ready-to-serve vegetable broth -- as needed 3/4 cup couscous salt and black pepper DRESSING: 2 Tablespoons balsamic vinegar 2 tablespoons lime juice 2 tablespoons orange juice 1 teaspoon soy sauce 3 dashes tabasco sauce -- (several) 3 dashes teriyaki sauce -- (several) 1 garlic clove (optional) -- crushed SALAD: 1 large seedless orange, peel and pith removed -- diced 1/2 pound smoked tofu -- 1/2-inch cubes 2 tablespoons chopped fresh parsley 4 scallions -- sliced 2 tablespoons shredded fresh mint GARNISH: halved cherry tomatoes lemon, lime and orange wedges For the couscous, mix the lime juice, orange juice and grated peel in a measuring cup and add enough broth to total 1 cup liquid. Pour into saucepan and bring to a boil. Pour this hot liquid over the couscous in a large bowl for serving, season with salt and pepper to taste, and mix well. Let steep for 10 to 15-minutes until the liquid is absorbed and the couscous grains are tender. [Recipe does not say to cover the bowl.] Fluff with a fork. For the dressing, whisk together the ingredients for the dressing. In a mixing bowl, put all the salad ingredients together. Add half the dressing. Toss together well, then add to the couscous with the remaining dressing. Toss gently to mix, then pile onto a platter and surround with the garnishes.
