One Potato, Two Potato

2 medium-large sweet potatoes or garnet yams

4 medium potatoes

3 teaspoons extra-virgin olive oil -- (3-4)

2 teaspoons minced garlic -- (2-3)

freshly ground black pepper to taste

1/2 teaspoon freshly grated nutmeg

1/2 teaspoon salt or to taste

 

Peel the sweet and white potatoes and cut them into 2-inch-long, 1/2-inch-thick

strips. Steam them separately, until tender but

still firm.

 

Set a wok over medium heat. Pour the oil around the rim and tilt the pan to coat

the sides. Add the garlic and stir-fry for about 30

seconds. Add the sweet potatoes and continue stir-frying for 2 to 3 minutes. Add

the potatoes; cook, stirring often, for 15 to 20

minutes, until all the potatoes are slightly browned. Add the pepper, nutmeg,

and salt; cook, stirring, for 2 to 3 minutes longer.
