When you need some heavy cream--say, as a binding in ravioli filling, for creamy

soup, or as a thickener for vegetable pasts sauce--make sure you have some soy

milk and a box of extra-firm silken tofu on hand. Just process an equal amount

of soy milk and silken tofu in a blender or food processor until it is very

smooth, and add it to your recipe. (You can even use a miniprocessor or a hand

blender for small amounts.) With this formula, you don't have to make up a

whole recipe ahead of time and perhaps have half of it hanging around in the

fridge waiting to be used. For instance, if you need 1/2 cup of cream for your

recipe, blend 1/4 cup soy milk with 1/4 cup extra-firm silken tofu. Don't worry

about seasoning it, because you can further season the food you are adding it

to.
